Q: mice

Hi. My name is Nora. I am doing a science fair project in which I test different diets on mice. So i have a few questions.
1)What gender of mice is more efficent for testing?
2)will a mouse become sick with a sudden diet change?
3)how long does it take for a mouse to be effected by their diet change?
